Using the rheometer, a castella sponge cake softness test is performed. The castella sponge cake is pushed in to quantify its softness. The process of castella sponge cake manufacturing involves multiple material agitation, which are automated with a mixer or done by hand mixing following traditional methods. There also are many factors that affect the softness, such as controlling temperature and humidity from baking to storage. This test allows analysis of texture changed by cooking temperature and time, difference in composition, time, and the finished state; cut or whole.
