This test is performed to measure sponge cake texture (elasticity). In the production of sponge cake, it is not easy to stabilize the quality because various factors affect the result such as the condition of ingredients, cooking environment and process. By using such tests, the elasticity of the sponge cake can be quantified and the results after making changes can be quantitatively evaluated. It can be used in R&D and quality control for comparing the material composition, verification of cooking time and temperature, and analysis of texture changes over time.
