The elasticity (softness) of the bread is evaluated by pushing the bread using the rheometer. It quantifies the softness and allows comparison of differences in force trends of various parts, such as surface and inside. Data management and analysis are also possible. The operation of this rheometer is very easy, simply selecting the food to measure on the touch panel. The test results can be used to compare bread formulations, verify cooking time, analyze changes in texture over time for quality evaluation, quality control, and R&D purposes.
